Citrus Thyme Jelly
The valley at Crooked Creek makes healthy appetites and plenty of chicken, pork and fish are BBQ'ed or baked in the wood fired oven. These mealtimes, our limes and the oranges grown just down the valley have inspired this addition to the pantry -
Jellies are sumptuously slow preserves, not to be rushed but to gently drip their juicy yield through old-fashioned jelly bags.  Then, as sugar is added, the cloudy, tart liquid is transformed into a bright, exciting, firm fruit gem. With my Citrus Thyme savoury Jelly, the herb brings a glorious flavour to it and the sharpness of oranges, limes and lemons partners pork ribs or neck rather well.  Thyme traditionally accompanies chicken and the citrus tones are a perfect foil for rich fish. Warm up with a splash of cider vinegar and pour over cooked meats / fish or drizzle over BBQ'ed grilled vegies... or let diners simply spoon it straight from our attractive jar.


Tomato, Lime & Passionfruit Jam
Jams have had a raw deal recently, their role of preserving fruits to be relished in colder months when the fruits are out of season, long forgotten.  However, the fertile earth of the valley, formerly tilled by market gardeners whose produce was sold into Sydney Town, continues to sustain luscious tomatoes.  Hence another addition for the pantry  -
No commercial product captures the old-fashioned, not-too-sweet flavour of my handmade Tomato Jam.  Passionfruit adds its unique appeal to the eye.  The vibrant red jam belongs on pikelets and crumpets at breakfast, with fresh bread and butter at teatime, or dolloped onto slow-cooked rice pudding for a dessert which family and friends will long remember.    I plan a version of it too with chopped preserved ginger for a subtle touch of heat.


Meanwhile, I have shortbread plans afoot to perfect but, as Nan would say, "all in the fullness of time"
