Palm Grove valley was renowned for its citrus production in the decades before Australia imported oranges, so we knew our Tahitian Lime trees would feel welcome on the north-facing slope at Crooked Creek.
We hand pick February through to July when the Lime Conserve is made and bottled and the Cordial prepared for Summer enjoyment.
Limes inspired our Lime & Lady Grey tea biscuits and the Vitamin C-laden fruit forms the base for our old-fashioned Tomato, Lime & Passionfruit Jam and other unique fare.
The Lime Grove now rewards our earlier labours by inspiring more foods for the pantry - tasting as they should - foods to nourish from the country.

We tucked them into the fertile soil during Winter 2001, watered by hand through the droughts, letting nature work her magic and they flourished. The fledgling trees now bear their sun-ripened globes with little human intervention. Pruning and fertilizing are all the trees require of us - we let Mother Nature work her wonders.
A sweet biscuit bursting with lime and to enhance the citrus tones we add Lady Grey tealeaves infused with orange and lemon peel and rose petals. Lady Grey was the wife of English Prime Minister Earl Grey. 'Her' tea exudes a caramelly nose, creating a beautifully fragrant biscuit. These crisp, petite, fluted delicacies accompany desserts such as Panna cotta or Vanilla bean icecream. They naturally join a fresh cup of tea.

Made in very limited quantity, Crooked Creek Victorian Lime Syrup Cordial is refreshingly tart made from our very concentrated Tahitian lime juice and zest. A family favourite is the syrup to which Ginger wine and cloves are added and steeped.
Each season brings a new variation but always full-bodied.
It may be diluted with still or sparkling waters for a thirst quenching long drink, enjoyed as a mixer with spirits, turned into Cocktails, splashed over fruit salads, dashed into salad dressings……the syrup is universal.
